MPM : March 22 - 28

Welcome to another Menu Plan Monday, hosted by Laura at I'm an Organizing Junkie! Like last week, my menu is very kid-friendly because Hubby is out of town with the Army Nat'l Guard. I plan my menus from Saturday until Friday because I like to grocery shop on Fridays.

Saturday - family birthday party
Sunday - Easter dinner at my parents' house
Monday - Vegetable beef soup, bread
Tuesday - Creamed tuna and peas, rice, bread
Wednesday - Chicken stroganoff, rice, veggie, bread
Thursday - Spaghetti with this sauce, garlic toast, veggie
Friday - Lentil quiche, bread, veggie

And here is a recipe for one of my kid's favorite breakfast treats, raisin bran muffins.

Raisin Bran Muffins
1 1/2 cups wheat bran OR 3/4 cup wheat bran and 3/4 cup oat bran
1 cup buttermilk OR 1 cup milk with 1 Tbsp vinegar
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup raisins

Mix together bran and buttermilk and let stand for 10 minutes. Preheat oven to 375* and grease muffin tin. Sift together flour, baking soda, baking powder and salt. Stir oil, egg, sugar and vanilla into bran mixture until well combined, then stir in flour mixture. Stir in raisins and spoon the batter into muffin cups. Bake for 15-20 minutes or until a toothpick inserted in center muffin comes out clean. Makes 12 muffins.

To answer your question about the salmon, yes it is the tuna sized cans. Thanks for asking!

My kids recently became lovers of muffins. I can't wait to try your muffin recipe. Thanks for sharing!

Last year....my mission in life was to make my own Marinara sauce. I found a recipe and it is awesome. It is more involved than the one you have on your menu this week but we have never had jarred sauce again.

Hey! Thanks for stopping by earlier! I'll pass on my cheesy chicken recipe. But beware - it's ridiculously easy and kids devour it. Who needs to be a gourmet when they eat everything in sight? That's what I get for having boys - lol!

Ok - I take a lb of chicken and cut it into chunks. Saute it in some cajun spices (Tony's - but you could just use salt and pepper) untill cooked. I boil 16 ounces of whatever noodles the kids picked that week (I perfer linguinie, but hey!). I mix together the chicken, noodles, and 2 jars of Ragu Cheesey Double Cheddar sauce. And that's it!

We like to top it with tomatos and green onions from our little garden. I serve it with garlic bread.

Usualy this meal will run me about $5.00 and it makes enough to have leftovers the next day for lunch
